Where does your beef come from?

New Mexico! We source our beef from Spearhead Cane Ranch, Daniel’s family ranch that he operates and manages. Our beef cattle are raised in Cuba, NM where their grazing patterns follow that of wildlife like elk and deer. The animals graze in lush mountain meadows at 10,000ft in the summer. Cooler temperatures in the fall bring the cows back down to their winter pastures - a mixture of pinon forests and high arid grasslands, dispersed between sandstone mesas and stands of Ponderosa pine. If we can’t source from Spearhead Cane Ranch, there are other ranchers in Cuba, NM who subscribe to the same cattle-raising practices. We take pride in supporting the ranchers who take pride in how they raise their animals.

I know what “grass-fed” means, but what does “grass-finished” mean?

We are so glad you asked! We feel very strongly about this. All cattle are fed grass for roughly the first 10 months of their lives. In a commercial beef production setting, after 10 months, the animals would be given a grain supplement or fed a grain-dominate diet to fatten them. This is problematic in so many ways: it is unnatural for cattle to eat grain and can cause a myriad of health issues; it perpetuates the corn and monoculture industry; it results in a higher white fat (saturated fat) content in the beef that is not healthy for the consumer - the list goes on and on. It also implies that the animals are held in some form of captivity so that their diets can be closely monitored.

We are committed to offering beef that is 100% grass-fed and GRASS-FINISHED, meaning that they are never fed or supplemented with grain. Our animals graze freely in mountain wilderness meadows and grassland pastures for their entire lives. Because of this natural and healthy grass diet, the animals are always healthy and robust; they never need treatment with antibiotics, unlike much of the commercial beef industry.

Where does your wool come from?

New Mexico! Our sheep live in open pasture with their horse friends. They are South African Merino wethers. This breed is “fine wool”, growing some of the highest quality wool available. The sheep are sheared by a local shearer who does not use mechanical shears, supporting a low-stress experience for the sheep. The wool is processed by New Mexico wool mills, hand-dyed, and hand-spun into yarn by local New Mexico fiber artists. Again, we are committed to the New Mexico economy and supporting our fellow business owners!

Can you deliver your beef to my house?

We include home delivery in New Mexico in all of our pricing! Visit our “Shop” page for information about our bulk beef orders, or contact us for current single-cut inventory and pricing! Can I order a whole or half steer from you?

Absolutely! Do you want to stock your freezer full of beef and are interested in purchasing a whole, half, or quarter animal? Custom bulk orders are accepted, but will require some time to make arrangements with the butchers, as we are a small operation and do not have wholesale volumes on-hand, year round. Click on the “Shop” tab to learn more! Bulk ordering starts at a minimum order of 20 pounds, up to 200 pounds. Your bulk order will be proportional to the whole animals: about 40% will be ground beef, about 20% will be high-end steaks (filets, ribeyes, etc.), about 20% will be ribs & roasts, and about 20% will be other steaks/cuts (sirloin, fajita meat, etc.)
